First option is highly recommended as you will get the chance to explore in the wet markets of Siem Reap, talk to various friendly Khmer vendors, and learn how to pick organic fresh ingredients for your cooking recipes with the assistance of Chef.
If you do not have much time, you can go with the second option as you will be simply briefed by Chef for your cooking learning, so that you can enjoy the typical Khmer dishes based on your own cooking creation.
